Parsnips with almonds
A beautiful accompaniment
You need: (for 2 people)
- 3 parsnips
- 2 teaspoons almond powder
- A few flaked almonds
- 5cl of honey vinegar
- A knob of butter
- Salt & Pepper
- Peel the parsnips and cut them lengthwise into strips, a bit like Chips.
- Cook them in boiling salted water for about 15 minutes.
- Drain and pat dry with paper towels.
- In the pan, mix the honey vinegar with the almond powder and the flaked almonds and reduce for 5 minutes, stirring occasionally.
- In a frying pan, melt the butter and add the parsnips with their sauce. Leave on a low heat while stirring.
- Let the parsnips caramelise before removing from the heat.
