Parsnips with almonds

A beautiful accompaniment


You need: (for 2 people)

  • 3 parsnips
  • 2 teaspoons almond powder
  • A few flaked almonds
  • 5cl of honey vinegar
  • A knob of butter
  • Salt & Pepper

  1. Peel the parsnips and cut them lengthwise into strips, a bit like Chips.
  2. Cook them in boiling salted water for about 15 minutes.
  3. Drain and pat dry with paper towels.
  4. In the pan, mix the honey vinegar with the almond powder and the flaked almonds and reduce for 5 minutes, stirring occasionally.
  5. In a frying pan, melt the butter and add the parsnips with their sauce. Leave on a low heat while stirring.
  6. Let the parsnips caramelise before removing from the heat.
Tip: This recipe can also be created with walnut and curry balsamic, wild garlic balsamic or caramel vinegar.
