Aubergine and feta cheese sandwich

You need :

  • 1 half baguette
  • 40g of feta cheese
  • 90g of aubergines
  • Smoked olive oil
  • Salt & Pepper

  1. Peel, slice thinly and cook the aubergine in a pan.
  2. Cut the bread in half.
  3. Once the aubergine has cooled, place the slices in the bread and crumble the feta cheese.
  4. Season with salt and pepper, drizzle with smoked olive oil and close the sandwich.
Tip: This recipe can also be created with basil oil or sesame oil.
