Dried red cabbage salad

For an Asian appetizer


You will need: (for 6 people)

  • 1 red cabbage
  • 350g coarse salt
  • Black pepper
  • 6 tablespoons garrigue vinegar, thyme or rosemary
  • 6 tablespoons of grape seed oil

  1. Clean the cabbage and cut it into thin strips.
  2. Place it in a deep dish, add the coarse salt and mix well.
  3. Cover the dish with aluminium foil, and press down well with a weight on top. Then leave to stand for 3 hours.
  4. Rinse the cabbage in cold water to remove all the salt. Dry it with a cloth.
  5. Mix the vinegar and oil, then mix with the cabbage. Season with pepper and serve chilled.
Tip: This recipe can also be created with apricot balsamic or vanilla combava vinegar.
