Scallops and citrus fruits

An exceptional entrance


You will need: (for two people)

  • 10 scallops
  • 1 grapefruit
  • 2 passion fruits
  • 3 teaspoons of Nepalese pepper vinegar
  • A knob of butter
  • Salt & Pepper

  1. Cut the grapefruit into quarters to keep only the pulp.
  2. Cut the passion fruit in half and remove the seeds with a small spoon.
  3. Heat a knob of butter in a frying pan, and the Nepalese pepper vinegar, and fry the scallops over a medium to high heat for 1.5 minutes on each side (depending on your cooking equipment).
  4. Season with salt and pepper.
  5. To serve, place the scallops on the plate, the grapefruit next to them and the passion fruit seeds all around. Drizzle with the cooking juice and enjoy!
Tip: This recipe can also be created with pink, lemon and ginger vinegar or plain balsamic.
