Filet mignon

A gourmet dish


You will need: (for 3 people)

  • 2 courgettes
  • 2 peppers
  • 3 pork tenderloins
  • Strawberry and Timut balsamic
  • Half a glass of red wine
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Juice of one lemon
  • A little butter
  • Salt and pepper

  1. Melt the butter in a saucepan over low heat.
  2. Dice the courgettes and peppers. Fry them in a pan with a little olive oil for about ten minutes and add the spices. Leave to reduce for a few more minutes.
  3. Sear the medallions of tenderloin in a knob of butter. Once golden brown, add 4 tablespoons of strawberry and Timut balsamic and reduce for about 6 minutes.
  4. Then serve the whole thing.
Tip: This recipe can also be created with Espelette pepper vinegar or truffle balsamic.
