Wild boar fillets with red fruits

You need: (for 4 people)

  • 4 wild boar fillets
  • 6cl raspberry balsamic
  • 6cl of brown stock
  • 15g caster sugar
  • A soft oil
  • Some fresh red fruits
  • Salt & Pepper

  1. In a hot pan with a drizzle of oil, brown the wild boar fillets over a high heat for 2 minutes on each side. When they are well coloured, set them aside and cover them with a sheet of aluminium foil.
  2. Deglaze the pan with the raspberry balsamic and bring to the boil.
  3. Then add the brown stock, red fruit and sugar.
  4. Cook at a low boil until the sauce thickens. Add the cold butter cut into pieces.
  5. Add salt and pepper to taste.
  6. Return the wild boar fillets to the sauce and heat them up over medium heat for 5 minutes.
  7. Accompany this dish with hazelnut apples, and especially a good red wine.
Tip: Try this dish also with Strawberry Timut Balsamic or Honey Vinegar.
