Deglazing of prawns

As a starter or main course


You will need: (for 4 people)

  • 20 large prawns
  • 30g of butter
  • 7cl of mango and ginger vinegar
  • 2 shallots
  • Salt & Pepper

  1. Rinse the prawns in cold water, drain them and then carefully peel them.
  2. Finely chop the shallot.
  3. Place the butter in a hot frying pan and add the shallots.
  4. Leave to cook for a few minutes and add the prawns.
  5. Halfway through cooking, add the mango and ginger vinegar and mix.
  6. Continue cooking, lowering the heat a little.
  7. Add salt and pepper and serve directly with the juice from the pan.
Tip: This recipe can also be created with orange wine vinegar or blackcurrant and timut balsamic.
