You need: (for 2 people)

  • 1 half white cabbage
  • 2 carrots
  • 2 teaspoons of sweet mustard
  • 6 teaspoons soft vinegar
  • 4 teaspoons rapeseed oil
  • Salt & Pepper

  1. Cut the cabbage in half lengthways, then into thin strips 3mm thick (if you have a mandolin, this is perfect!)
  2. Peel and grate the carrots, and mix them with the cabbage.
  3. Then make the sauce by mixing the mustard, rapeseed oil and vinegar. Season to taste.
  4. Add to the vegetables and mix well.
  5. Leave to marinate for at least 30 minutes in the fridge before serving.
Tip: This recipe can also be created with salicornia and fleur de sel vinegar or spice vinegar.
