Coleslaw
Surprising
You need: (for 2 people)
- 1 half white cabbage
- 2 carrots
- 2 teaspoons of sweet mustard
- 6 teaspoons soft vinegar
- 4 teaspoons rapeseed oil
- Salt & Pepper
- Cut the cabbage in half lengthways, then into thin strips 3mm thick (if you have a mandolin, this is perfect!)
- Peel and grate the carrots, and mix them with the cabbage.
- Then make the sauce by mixing the mustard, rapeseed oil and vinegar. Season to taste.
- Add to the vegetables and mix well.
- Leave to marinate for at least 30 minutes in the fridge before serving.
