Marinated chicken skewers

In all seasons


You need: (for 2 people)

  • 2 chicken breasts
  • 200g tomatoes
  • 50g soft dried apricots
  • 1 lemon
  • 1 shallot
  • 1 clove of garlic
  • 3cl olive oil
  • 4cl tarragon vinegar and Madagascar pepper
  • Salt & Pepper

  1. Start with the marinade: Mix the oil, the zest and juice of the lemon, the diced garlic clove, the chopped shallot and the tarragon vinegar, add salt and pepper.
  2. Dice the chicken and dip it into the marinade. Turn them over several times so that they are well impregnated with the marinade.
  3. Cover with cling film and place in the fridge for at least 1 hour.
  4. Stab the chicken cubes onto wooden skewers, alternating a cherry tomato and a dried apricot.
  5. Then cook in a hot pan with a little oil for 6-8 minutes, turning frequently. (You can also cook them in the oven, on the barbecue, on the plancha…)
  6. Do not hesitate to vary the tastes by replacing the apricots and tomatoes by onions, peppers, courgettes, etc…
Tip: This recipe can also be created with Espelette pepper vinegar or honey vinegar or apricot balsamic.
