Cream of pumpkin soup
To embellish your winter!
You need: (for 4 people)
- 1 squash (butternut, pumpkin, whatever you prefer)
- 1 onion
- Balsamic walnut and curry
- A drizzle of olive oil
- Salt & Pepper
- Peel, empty and cut the squash into large pieces.
- In a large saucepan (or casserole), fry the onion for a few minutes in olive oil, then add the squash cubes and leave for 3 minutes. Season with salt and pepper.
- Cover with vegetable stock and cook for 25 minutes.
- Blend in a blender.
- Drizzle the nut and curry balsamic into the bowl!
