Tartare de thon
To be served immediately!
You will need: (for 4 people)
- 400g tuna fillet
- 1 yellow grapefruit
- 2 tablespoons capers in vinegar
- 3 tablespoons chopped chives
- 4 handfuls of rocket
- 4 tablespoons candied lemon and ginger vinegar
- 2 tablespoons olive oil
- 2 tablespoons sesame seeds
- Salt & Pepper
- Place the tuna in the freezer for 15 minutes to make it easier to slice.
- Peel the grapefruit. Remove the segments and cut them into small pieces.
- Add the capers.
- Cut the tuna into small cubes. Add the olive oil, vinegar and chives and season with salt and pepper.
- Mix the two preparations together.
- Place a handful of rocket on the plate, serve the tartar on top and sprinkle with sesame seeds.
- Be careful not to prepare this dish in advance, the acidity will cook and blanch the tuna. This is a last minute dish!
