Steaming and dressing


You will need: (for 2 people)

  • 2 fillets of sole
  • 4 large lettuce leaves
  • 4 tablespoons orange wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sesame oil
  • A few sprigs of chopped chives
  • Salt & Pepper

  1. Start with the fish. Bring water to the boil in the bottom compartment of your steamer.
  2. Cover the bottom of the basket with the lettuce leaves and place the fish on top. Add a little salt and steam for 10 minutes.
  3. Meanwhile, prepare the sauce. In a bowl, combine the orange wine vinegar, lemon juice, sesame oil, salt and pepper. Mix well and leave to stand for a few minutes.
  4. As soon as the sole is cooked, carefully remove it from the basket.
  5. Then serve the fish covered with the dressing, accompanied by braised endives or black rice.
Tip: This recipe can also be created with Nepalese pepper vinegar or Madagascar tarragon and pepper vinegar.
