Steaming and dressing
You will need: (for 2 people)
- 2 fillets of sole
- 4 large lettuce leaves
- 4 tablespoons orange wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon sesame oil
- A few sprigs of chopped chives
- Salt & Pepper
- Start with the fish. Bring water to the boil in the bottom compartment of your steamer.
- Cover the bottom of the basket with the lettuce leaves and place the fish on top. Add a little salt and steam for 10 minutes.
- Meanwhile, prepare the sauce. In a bowl, combine the orange wine vinegar, lemon juice, sesame oil, salt and pepper. Mix well and leave to stand for a few minutes.
- As soon as the sole is cooked, carefully remove it from the basket.
- Then serve the fish covered with the dressing, accompanied by braised endives or black rice.
