Guacamole

As a starter or aperitif


You will need :

  • 2 ripe avocados
  • 1 lime
  • 4 tablespoons ofolive oil
  • 4 teaspoons 15 year old vinegar
  • 1 spring onion
  • Salt & Pepper

  1. Coarsely crush the avocados. Finely chop the onion.
  2. In a food processor (or with a fork for a thicker texture), mix the avocado puree, lime juice, onion, olive oil, 15 year old vinegar, salt and pepper.
  3. Set aside in the fridge before serving with chips or on toasted bread slices.
Tip: This recipe can also be created with Espelette pepper vinegar, or spice vinegar.
