Haricots coco
An original salad
You will need: (for 4 people)
- 350g coconut beans
- 1 white onion
- 1 red onion
- 5cl of spiced vinegar
- 80g feta cheese
- 30g walnuts
- 100g cherry tomatoes
- 3 tablespoons of olive oil
- Salt & Pepper
- Peel and chop the white onion. In a saucepan, fry it for a few minutes in a little oil.
- Add the beans and water and cook in boiling water with salt and pepper for 25 minutes. Drain and set aside.
- Cut the cherry tomatoes into quarters, finely chop the red onion and crush the walnuts.
- Mix the tomatoes, beans and red onion in a bowl. Season with salt and pepper. Add the feta cheese and walnuts.
- Add the oil and vinegar to the spices and mix again.
