Prune Chutney

An Indian condiment


You will need :

  • 500g of prunes
  • 3 tablespoons cane sugar
  • 3cl of balsamic with Tonka bean
  • Salt & Pepper

  1. Remove the stones from the prunes and fry them in a pan without fat for about 4 minutes.
  2. Then blend them in a blender to obtain a coarse purée.
  3. Put them back into the pan and let them stew for 5 minutes.
  4. Add a little water, the sugar and mix. Leave to cook for 15 minutes on a low heat and then add the balsamic.
  5. Let the mixture thicken slowly and remove the pan from the heat.
  6. Serve cold with a lamb curry for example, or use the chutney as a condiment.
Tip: This recipe can also be created with pink, lemon and ginger vinegar or blackcurrant and juniper balsamic.
