Sole fillets

A brilliant dish


You will need: (for 2 people)

  • 2 fillets of sole
  • 2 oranges
  • 90g butter
  • 1 shallot
  • 1 vanilla pod
  • 2 oranges
  • 5 tablespoons of combava vinegar and Madagascar vanilla
  • Salt & Pepper

  1. Squeeze the oranges and reserve the juice.
  2. Split the vanilla pods in half and remove the seeds with the tip of a knife.
  3. In a frying pan, pour the orange juice, vanilla beans, combava vinegar and vanilla. Season with salt and pepper.
  4. Put on a low heat then add the butter piece by piece, whisking without stopping.
  5. When it starts to simmer, add the sole fillets and cook for 5 minutes.
  6. Spoon the vanilla sauce over the plates, place the fish on top and serve with crisp asparagus.
Tip: This recipe can also be created with basil balsamic or caramel vinegar.
