Sole fillets
A brilliant dish
You will need: (for 2 people)
- 2 fillets of sole
- 2 oranges
- 90g butter
- 1 shallot
- 1 vanilla pod
- 2 oranges
- 5 tablespoons of combava vinegar and Madagascar vanilla
- Salt & Pepper
- Squeeze the oranges and reserve the juice.
- Split the vanilla pods in half and remove the seeds with the tip of a knife.
- In a frying pan, pour the orange juice, vanilla beans, combava vinegar and vanilla. Season with salt and pepper.
- Put on a low heat then add the butter piece by piece, whisking without stopping.
- When it starts to simmer, add the sole fillets and cook for 5 minutes.
- Spoon the vanilla sauce over the plates, place the fish on top and serve with crisp asparagus.
