  1. In a blender, reduce the tomatoes, garlic and basil to a coulis, then add the olive oil and Espelette pepper vinegar. Add salt to taste. Serve it all on fillets of pollack!
  2. Prepare a marinade for seafood: in a bowl, put olive oil and mix in chopped garlic, paprika and Espelette pepper vinegar. Marinate the shrimp for 24 hours and enjoy as an aperitif for example!
  3. Add a few spoonfuls of Espelette pepper vinegar to spice up your home-made tomato sauces.
Tip: This recipe can also be created with plain balsamic or Espelette pepper vinegar.
