Cod in foil

Easy to make


You will need: (for 3 people)

  • 3 cod fillets
  • 2 potatoes
  • 2 carrots
  • 1 courgette
  • 1 yellow onion
  • 3 tablespoons of olive oil
  • 5 tablespoons Espelette pepper vinegar
  • A few pinches of fresh thyme
  • Salt & Pepper

  1. Preheat the oven to 180°C.
  2. Wash, peel and cut the vegetables into thin strips.
  3. In a salad bowl, mix the vegetables with the vinegar, olive oil, thyme, salt and pepper.
  4. Place the vegetables in a sheet of aluminium foil and add the fish on top, which you have already seasoned.
  5. Add a teaspoon of Espelette pepper vinegar to each fish and close the foil tightly.
  6. Place in the oven for 30 minutes and serve immediately!
Tip: This recipe can also be created with pink, lemon and ginger vinegar or basil balsamic.
