Cod in foil
Easy to make
You will need: (for 3 people)
- 3 cod fillets
- 2 potatoes
- 2 carrots
- 1 courgette
- 1 yellow onion
- 3 tablespoons of olive oil
- 5 tablespoons Espelette pepper vinegar
- A few pinches of fresh thyme
- Salt & Pepper
- Preheat the oven to 180°C.
- Wash, peel and cut the vegetables into thin strips.
- In a salad bowl, mix the vegetables with the vinegar, olive oil, thyme, salt and pepper.
- Place the vegetables in a sheet of aluminium foil and add the fish on top, which you have already seasoned.
- Add a teaspoon of Espelette pepper vinegar to each fish and close the foil tightly.
- Place in the oven for 30 minutes and serve immediately!
