Salmon glazed with balsamic

A pure delight


You will need: (for 4 people)

  • 4 salmon fillets (about 180g each)
  • 5 tablespoons of blackcurrant and juniper balsamic
  • 3 tablespoons of maple syrup (or, failing that, honey)
  • 50g of parmesan shavings
  • A few sprigs of fresh chives
  • 15g butter
  • 1 tablespoon of olive oil
  • Salt & Pepper

  1. Heat the butter and oil in a frying pan over medium heat.
  2. Cook the salmon fillets for 5 minutes on each side.
  3. Pour the maple syrup and balsamic into the pan. Continue cooking for 1 minute on each side, basting the salmon fillets well.
  4. Divide the mixture between plates and add the chopped chives and parmesan shavings.
Tip: This recipe can also be created with smoked blackberry balsamic or caramel vinegar.
