Salmon with raspberry sauce

Sweet / savoury


You need: (for 2 people)

  • 2 nice salmon fillets
  • A handful of fresh raspberries
  • Pink berries
  • 5 tablespoons of raspberry balsamic
  • 3 tablespoons of soy sauce
  • 1 tablespoon flower honey
  • 2 tablespoons of semi-thick cream
  • Salt and pepper

  1. Preheat your oven to 180°C.
  2. Start by preparing the sauce: mash a few fresh raspberries, then mix them with the raspberry balsamic, honey, soy sauce and cream.
  3. Set aside some of the sauce in the fridge.
  4. For the salmon, place the fillets in aluminium foil.
  5. Use the rest of the sauce in the salmon wrappers, add some pink berries. Season with salt and pepper.
  6. Bake the papillotes for 10 minutes.
  7. Serve with a spoonful of sauce from the fridge, with wild rice and a few fresh raspberries for decoration!
Tip: This recipe can also be created with wild blackberry balsamic or pink lemon and ginger vinegar.
