Mesclun and smoked salmon salad

You will need: (for 4 people)

  • 1 packet of mesclun
  • 120g smoked salmon
  • 12 cherry tomatoes
  • 1 shallot
  • Zest of half a lemon
  • 2 tablespoons of olive oil with fennel
  • 1 tablespoon of plain 10 year old balsamic
  • Salt & Pepper

  1. Rinse and dry the mesclun.
  2. Mix the oil and balsamic in a bowl and add the lemon zest.
  3. Cut the tomatoes in half and slice the smoked salmon into thin strips.
  4. Mix the mesclun, tomatoes and smoked salmon in a salad bowl.
  5. Season with the sauce, salt and pepper.
Tip: This recipe can also be created with basil olive oil or Lucca olive oil.
