Piece of beef

A good winter meal


You need: (for 2 people)

  • 450g of beef mitre
  • 3 shallots
  • 15cl of brown stock
  • 5cl of Espelette pepper vinegar
  • A knob of butter
  • Salt & Pepper

  1. Peel and finely chop the shallots.
  2. In a saucepan, melt the butter over a low heat, then add the shallots. Cover the pan and leave to cook and reduce for 7 minutes.
  3. Deglaze with the Espelette pepper vinegar and continue cooking for 5 minutes.
  4. Add the brown stock and reduce for another ten minutes. Do not forget to season.
  5. In the meantime, cook the pieces of beef, already salted and peppered, in very hot oil until they are cooked to the desired degree.
  6. Serve the sauce over the meat and accompany the dish with pommes dauphines or mashed sweet potatoes.
  7. You can also make this dish with any type of red meat.
Tip: This recipe can also be created with raspberry balsamic or honey vinegar.
