Diced raw salmon
Fresh and simple
You will need: (for 4 people)
- 1 salmon fillet of about 350g
- 4cl of combava and Madagascar vanilla vinegar
- Salt & pepper
- Cut the salmon into 1.5cm cubes.
- Place the diced salmon in a shallow dish and pour the combava and vanilla vinegar over it.
- Season with salt and pepper.
- Mix well, wrap the dish and place in the fridge for about 20 minutes.
- To know when the cubes are cooked, cut one in half. If it is still raw on the inside but light pink on the outside, it is ready!
- Remove the salmon cubes and place them on a serving dish so that they are no longer in contact with the vinegar.
- Serve chilled as an aperitif on skewers or as a starter with a crisp salad.
