Courgette crumble
As an accompaniment to a good meat
You will need: (for 4 people)
- 3 small courgettes
- Olive oil
- Balsamic walnut and curry
- 2 shallots
- 55g butter
- 90g parmesan cheese
- 65g flour
- 25g breadcrumbs
- Salt & Pepper
- Preheat the oven to 180°C.
- Wash, peel and cut the courgettes into thin slices. Chop the shallots.
- Then fry them in a pan with a tablespoon of olive oil and 3 tablespoons of walnut and curry balsamic.
- Season with salt and pepper. Leave to cook for about 10 minutes.
- Prepare the crumble mixture: mix the flour, breadcrumbs, parmesan and butter until you have a thick sand.
- Arrange the courgettes and shallots in a buttered pie dish, crumble the crumble mixture over them, and bake for 25 minutes.
