Marinated courgettes
Simple and effective
You need: (for 2 people)
- One large courgette
- Olive oil
- Garlic
- Rosemary
- Honey vinegar
- Salt & Pepper
- Peel the courgette and cut it into thin strips with a vegetable peeler. Remove the seeds if necessary.
- Fry them for a few minutes in olive oil.
- In a deep dish, mix the courgette strips, salt, pepper, crushed garlic and rosemary.
- In the pan used to fry the courgette, add 6 tablespoons of honey vinegar and heat for 5 minutes, stirring.
- Cover the courgettes with the juice. Cover the dish and leave to marinate for at least one night in the fridge.
- Serve cold as an appetizer or as an accompaniment to a barbecue.
