Marinated courgettes

Simple and effective


You need: (for 2 people)

  • One large courgette
  • Olive oil
  • Garlic
  • Rosemary
  • Honey vinegar
  • Salt & Pepper

  1. Peel the courgette and cut it into thin strips with a vegetable peeler. Remove the seeds if necessary.
  2. Fry them for a few minutes in olive oil.
  3. In a deep dish, mix the courgette strips, salt, pepper, crushed garlic and rosemary.
  4. In the pan used to fry the courgette, add 6 tablespoons of honey vinegar and heat for 5 minutes, stirring.
  5. Cover the courgettes with the juice. Cover the dish and leave to marinate for at least one night in the fridge.
  6. Serve cold as an appetizer or as an accompaniment to a barbecue.
Tip: This recipe can also be created with walnut and curry balsamic or basil balsamic or garrigue vinegar.
