Lamb chops

You need: (for 2 people)

  • 6 lamb chops
  • 1 clove of garlic
  • 1 small onion
  • Juice of half a lemon
  • 7cl of olive oil
  • 1 large fennel
  • 4cl of 15 year old vinegar
  • Salt & Pepper

  1. Peel and chop the onion and garlic.
  2. In the bowl of a blender, combine ¾ of the olive oil, vinegar, lemon juice, onion, garlic, salt and pepper.
  3. Place the marinade in a shallow dish and immerse the lamb chops in it for at least 2 hours, covered, in the refrigerator.
  4. In the meantime, remove the first 2 leaves of the fennel, wash it whole and cut into slices of about 2cm and then cook them in boiling water for 6 minutes. Brush it with the remaining olive oil.
  5. On the barbecue or plancha, cook the fennel slices for 3 minutes on each side and the chops for 6 minutes on each side.
  6. Serve the chops immediately with the fennel slices.
Tip: This recipe can also be created with Nepalese pepper vinegar or wild blackberry balsamic.
