Mirabelle plum jam

For breakfast


You will need :

  • 1.2kg ripe mirabelle plums
  • 1kg of granulated sugar
  • 1 half lemon
  • 1 cinnamon stick
  • 8cl of apricot balsamic

  1. Rinse the mirabelles, dry them, cut them in half and remove the stones.
  2. In a saucepan, mix the fruit, sugar, cinnamon stick, lemon juice and 20cl water. Bring to the boil.
  3. Keep the mixture at a low boil for 20 minutes, skimming from time to time.
  4. To see if it is cooked, put a few drops of jam on a cold plate and tilt the plate. The jam should run down gently.
  5. Finally add the apricot balsamic and mix. Then fill your jam jars (and sterilise as you like).
