Chestnuts, red cabbage, apple

As an appetizer or side dish


You will need: (for 4 people)

  • 1 red cabbage
  • 3 green apples
  • 20 chestnuts
  • 1 red onion
  • 1 teaspoon of honey
  • 4cl of Espelette pepper vinegar
  • A knob of butter
  • Salt & Pepper

  1. Chop the onion and cabbage. Melt the butter in a hot pan and fry for about 10 minutes.
  2. Add the Espelette pepper vinegar and season. Cover and simmer on a low heat for about 35 minutes.
  3. Meanwhile, peel and core the apples. Cut them into cubes.
  4. Chop the chestnuts coarsely, then brown them in a pan with a little butter.
  5. Add the honey and leave to stew for 20 minutes over a low heat, stirring often.
  6. Mix the 2 preparations and serve!
Tip: This recipe can also be created with plain balsamic or Nepalese pepper vinegar.
