Carpaccio of tomatoes
On the mandolin
You need: (for 2 people)
- 1 pineapple tomato (or other yellow tomato variety)
- 1 red tomato (Marmande for example)
- 1 shallot
- 1 small red onion
- Pink vinegar, lemon and ginger
- Salt & Pepper
- With a mandolin, cut the tomatoes into thin strips. Do the same with the onion and shallot.
- In a bowl, place the yellow tomato slices on the outside, folding them in half.
- Then do the same with the red tomatoes, spreading a few slices of red onion and shallot.
- Finish by spraying a little pink vinegar, lemon and ginger, add salt and pepper and serve.
