Calamari a la plancha

You need: (for 6 people)

  • 1kg of squid
  • 2 lemons
  • 1 lime
  • 6cl olive oil
  • 6cl of Espelette pepper vinegar
  • 2 cloves of garlic
  • Salt & Pepper

  1. Empty and clean the squid. Separate the tentacles from the body.
  2. Cut the body into strips and the tentacles into slices.
  3. Tap the flesh to make it more tender.
  4. Place the squid in a dish and sprinkle with the oil, vinegar and lemon juice. Add the chopped garlic, salt and pepper, and mix so that everything is well impregnated with the marinade.
  5. Set aside in the fridge for at least 1 hour.
  6. Cook on the grill for 4 minutes, stirring occasionally, with the marinade.
Tip: This recipe can also be created with blackcurrant and juniper balsamic or combava and Madagascar vanilla vinegar.
