Candied aubergine

Tasty and balanced


You will need: (for 4 people)

  • 2 large aubergines
  • Olive oil
  • Balsamic with truffle
  • Aromatic herbs of your choice
  • Salt & Pepper

  1. Wash and dice the aubergines and steam them for 10 minutes.
  2. In a frying pan, add the aubergines in 4 spoons of olive oil.
  3. Add the aromatic herbs you have chosen.
  4. Leave to cook on a low heat for about 40 minutes.
  5. Halfway through cooking, add 6 tablespoons of plain balsamic.
  6. Season with salt and pepper and serve with fish or meat.
Tip: This recipe can also be created with honey vinegar or aphrodisiac balsamic.
